An Easy Stuffed Acorn Squash Recipe Perfect for Thanksgiving

Growing up, as soon as fall would hit, my mom would start make roasted acorn squash. It was one of my favorite side dishes that she would make. It was so simple too, all she would do was slice the acorn squash in half. Roast it in the oven and then put a tablespoon of butter, a tablespoon of brown sugar and a dash of cinnamon in it. It was absolutely amazing, and definitely screams fall with all the comforting flavors.

For todays recipe I elevated acorn squash from the delicious sidekick to the headliner main dish, and trust me you are going to love every single bite of this Stuffed Acorn Squash!

How to Roast Acorn Squash

To best way to cut an acorn squash is to slice it in half, through the stem. Scoop the seeds out and you are ready to cook them.

  1. Preheat oven to 375 degrees F.
  2. Drizzle flesh side of acorn squash with oil and season with salt.
  3. Lay acorn squash flat side down on a baking sheet or roasted pan.
  4. Bake for 30- 45 minutes depending on thickness of squash. (or until fork tender)

Is the Skin on Acorn Squash Edible?

When roasted, the skin on a acorn squash does soften up so it is edible. However, I’d recommend not eating it. It’s very waxy and honestly not very good. Just saying.

What Can I stuff Acorn Squash With?

  • Quinoa
  • Beef
  • Ground Turkey
  • Sausage
  • Roasted Vegetable
  • Rice
  • Just butter and honey or brown sugar

How to Make Apple Sausage Stuffed Acorn Squash

  1. Preheat oven to 375 degrees F. Place prepared acorn squash on a baking sheet, flesh side down. Bake for 30-40 minutes, or until squash is fork tender.
  2. In the meantime, to a large skillet add sausage. Break up with a wooden spoon and cook until sausage is browned. Add in onion and diced apple. Saute for 3-4 minutes. Next, add in spinach and fresh thyme. Saute until spinach is wilted, approximately 2-3 minutes, stirring throughout. Finish is parmesan cheese. Toss to mix everything together.
  3. When acorn squash is cooked through. Remove from oven. Change oven to HIGH Broiler.
  4. Stuff acorn squash with apple sausage mixture.
  5. Place under broiler for 5 minutes, until sausage is browned.
  6. Garnish with chopped parsley and pomegranate arils.

Everything about this Stuffed Acorn Squash is cozy and comforting. The acorn squash itself when roasted becomes sweet and becomes the perfect compliment to the filling to really balance the dish out. The Apple Sausage filling has tart granny smith apples that are sautéed with onions, slightly spicy sausage and spinach then finished with fresh herbs and salty parmesan cheese to create this BOMB of a bite! I decided to finish this squash with pomegranate arils for a fun pop of color but also add a juicy tartness.

This dish would be great as a main course or a side served during the holidays. Either way it’s a MUST make! You will absolutely love all the flavors.

Apple Sausage Filling:

  • 1 lb. all natural sausage
  • 1 cup diced yellow onion
  • 1 granny smith apple, peeled and diced
  • 2 1/2 cups baby spinach
  • 1 teaspoon fresh thyme
  • 1/4 cup grated parmesan
  • garnish: chopped parsley and pomegranate arils

Instructions

  1. Preheat oven to 375 degrees F.
