I am a big fan of oats and oatmeal. Growing up we ate a lot of oatmeal in our family. I also love using it for desserts and other recipes like chewy oatmeal raisin cookies, no-bake chocolate oatmeal cookies, and more. For breakfast, besides overnight oats, I love making this baked oatmeal recipe.

Homemade baked oats are hearty, fill you up, isn’t too sweet, and gives you the energy you need to start the day off right. Although, you don’t only have to eat it for breakfast. It works well for brunch, lunch, or just a snack throughout the day.

If you are a fan of oats and oatmeal, give this baked oatmeal recipe a try. If I can do it, you can do it. Let’s get baking!

Step 1: Ingredients and Equipment

In order to make baked oatmeal at home you need just a handful of easy to find ingredients:

  • Oats – You can use old-fashioned or instant oats. If you want to make sure they are gluten-free look for the “Certified Gluten-Free” label.
  • Sugar – I generally use white sugar, but brown sugar can be used as well. Add just a little bit of sweetness. Other artificial sweeteners like monk fruit can be used instead if desired.
  • Ground cinnamon
  • Baking soda
  • Salt
  • Milk – I like to use whole milk, but any milk will work fine, including non-dairy milk like almond milk.
  • Eggs – If you can’t eat eggs or do not want to eat eggs, use applesauce instead. 1/4 cup of applesauce per egg.
  • Ripe banana
  • Honey – Another sweetener can add more or less if desired.
  • Chocolate chips – This is optional, but I love adding them.
  • Nuts – Nuts can be added as well like walnuts or pecans.
  • Raisins/Craisins – These are another optional thing you can add.
  • Blueberries – Try adding fresh berries like blueberries for another variation.

Tools/Equipment

  • Food processoror blender – The linked food processor is one that I have used for years and love.
  • Spatula
  • Mini bread loaf pans or 1 4×8 inch loaf pan
  • Cooking spray or shortening/butter

Step 2: How to make baked oatmeal at home

Begin by preheating the oven to 350 F/176 C with the main rack in the middle position.

Add the oats, sugar, cinnamon, baking soda, salt, milk, eggs, banana, and honey to a food processor or blender and blend for 20 to 30 seconds. You don’t need to blend long, just until everything is well combined.

NOTE: It’s okay if you don’t have a food processor or blender. Just pour those ingredients into a bowl and mix. You will want to mash the banana beforehand, however.

Easy as that, the baked oats batter is ready. Remove the lid and use a spatula to scrape the sides of the food processor bowl or blender.

Step 3: Baked oats in a pan

Spray two small bread loaf pans with cooking spray or use a 4×8-inch pan instead. You can also use shortening or butter on the sides and bottom of the pans.

Pour the batter into each until they are equally filled. Sprinkle on the chocolate chips if you would like to use those, you can also use something like craisins or raisins. Maybe even some walnuts or pecans.

If you would like to add some fresh berries, try adding some fresh blueberries. There are so many different combinations that you can try to make each baked oatmeal loaf different.

Then bake on the middle rack for 25 to 35 minutes until a toothpick comes out clean.

Let cool for 10 minutes or so in the pans, then remove. Serve the homemade baked oats still warm or let cool on a wire rack the rest of the way.

How long does baked oatmeal last?

It will last about 3 to 4 days in the fridge if stored in an airtight container or something like a ziplock bag. You can also freeze them if you want. So you can make several loaves ahead of time for meal prepping. Then when you want to eat it, you can eat them cold or heat them up again in the microwave, air fryer, or oven.

This homemade baked oatmeal is awesome and super easy to make. Only about 5 minutes of active time and the rest is baking time. So many variations that you can make as well. If you like oats, give this recipe a try!

Equipment

  • Food processor or blender

  • Spatula

  • Mini bread loaf pans or 1 4×8 inch loaf pan

  • Cooking spray or shortening/butter

Ingredients

  • 1 cup of oats 90g
  • 1 Tbsp of white granulated sugar 14g
  • 1 tsp of ground cinnamon 2g
  • 1/2 tsp of baking soda 2g
  • 1/4 tsp of salt 1g
  • 1/2 cup of milk whole, 2%, skim, almond, etc. (118ml)
  • 2 large eggs
  • 1 large ripe banana
  • 1 Tbsp of honey 21g
  • 2 to 3 Tbsp of chocolate chips optional (28 to 42g)
  • 1/4 cup of nuts raisins, craisins, fresh blueberries, optional.

Instructions

  • Preheat oven to 350F/176C

  • Add the oats, sugar, cinnamon, baking soda, salt, milk, eggs, banana, and honey to a food processor or blender and blend for 15 to 20 seconds.

  • Scrape the sides of the bowl. Spray cooking spray or use butter or shortening in two small bread loaf pans or 1 medium 4×8-inch bread pan.

  • Pour batter evenly into the two small pans. It will be fairly runny. Add things like chocolate chips, walnuts, pecans, blueberries, etc, if desired.

  • Bake for 25 to 35 minutes until a toothpick comes out clean, or to desired consistency.

  • Once done allow it to cool for about 10 minutes before serving. Serve as a loaf, or use a spoon and just scoop it out. Enjoy!

NOTE: This recipe can easily be divided into 4 servings. As is 1 serving is 1 whole small loaf. You can also reduce calories by leaving out the sugar and chocolate chips.

    Grab and go nutritious healthy breakfast recipe! I made 8 muffins instead of the loaves. So versatile, instead of the banana and choc chips, added walnuts, chopped dates and greek yogurt. They turned out great, not too sweet. Perfect. As always Matt another great recipe. Thanks!

    I can’t eat bananas, can the banana be omitted or what can I substitute?

      Substitute the banana with 1/4 cup of applesauce or 1/4 cup of sour cream or greek yogurt. 🙂

    This was AMAZING Matt! I used the TJ Pecan Pumpkin oatmeal packets, I think 2, and didn’t add very much additional sugar. I made half the recipe, to test it out. My only change in future preparations is MORE BANANAS! I think I’ll add two or three when I bake the full recipe. I also added walnuts and left out the optional chocolate chips.
